Poach Salmon With Sweet Peppers

Salmon can be made a variety of ways with a hundred different sauces and ways of cooking but Poached Salmon with Sweet Peppers is my favorite.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/3 cup dry whit wine
  • 1 1/2 pounds of Salmon fillets.
  • 1 finely diced bell pepper
  • 1/2 teaspoon salt
  • 2teaspoons dried parsley
  • 2 teaspoons lime juice
  • Large skillet.
  1. Step 1

Mix in the salt and dried parsley with the diced peppers.

  2. Step 2

Pour the dry white wine into the large skillet and heat till almost to a boil.

  3. Step 3

Splash both sides of the salmon with a little lime juice then place in the skillet.

  4. Step 4

Spread mixture made in step one over the Salmon.

  5. Step 5

Cover skillet and bring the wine were it is just about ready to boil, then reduce heat to low and recover.

  6. Step 6

Let the Salmon cook for around 7 to 8 minutes till done. Salmon will be done when it flakes easily with a fork.

Tips & Warnings
  • Over cooking fish will cause a rubbery taste.
  • Eat fish twice a week for added health benefits.

on 7/17/2008 I'm always after new ways to cook salmon; it's one of the few kinds of fish my husband will eat (under protest). This sounds delicious!
