Although ice cream time is any time, it's especially nice during the hot July days we have here in Ohio. Mangoes are in inexpensive abundance at this time of year, and they've been turning up in everything at our house. I made this ice cream for my in-laws last night, and they were thrilled to pieces!

Instructions

Things You'll Need:

  • Ice cream freezer
  • 6 very ripe mangoes
  • 4 eggs
  • 2 cups sugar
  • pinch of salt
  • 1 quart heavy whipping cream
  • large bag of ice
  • box of plain salt
  1. Step 1

    With a sharp knife, carefully peel and cube the mangoes. Discard the peel, run the flesh through your blender or food processor until smooth. Set aside.

  2. Step 2

    In a mixing bowl, combine eggs, sugar and pinch of salt, beating until pale yellow.

  3. Step 3

    Add the pureed mango, blending well.

  4. Step 4

    Add the cream, again, blending well.

  5. Step 5

    Pour the mixture into your ice cream maker's freezing chamber, insert the churn paddle and lock the lid. Pack the outer chamber with ice and salt and freeze according to the manufacturer's instructions. Cure the ice cream in your freezer for at least 3 hours prior to serving, or it will be too soft.

Tips & Warnings
  • You can get a simple electric ice cream maker for around $25
  • It's easy to convert this from ice cream to sorbet - skip the eggs and cream, substituting 3/4 quart of apple juice instead.
