Things You'll Need

  • 1 egg
  • 1/3 cup shortening
  • 1 3/4 cup all-purpose flour
  • 1 Tablespoon baking powder
  • 1 cup milk
  • 1/2 cup sugar, divided
  • 1/8 teaspoon salt
  • 1 quart fresh strawberries or 1 package of frozen strawberries
  • vanilla ice cream
  • whipped topping

Instructions

      Preheat oven to 450 degrees. Grease an 8-by-8 inch baking pan.

      Wash fresh strawberries in cool water, remove the stems and slice to about 0.25 inches thick, or thaw frozen strawberries. Combine strawberries and 1/4 cup of sugar and set aside.

      Combine egg and shortening in a mixing bowl. Add flour, baking powder, milk, sugar and salt. Stir until blended.

      Pour the batter into the greased baking pan. Bake for 10 to 15 minutes. Allow the cake to cool completely, then cut it into nine squares.

      Place one square on a serving dish, and split in half. Cover with a scoop of vanilla ice cream, sweetened strawberries and whipped cream.
