How to make a marinade for meat, chicken, or fish

Marinating meat, chicken, or fish gives it extra flavor, especially when grilling. This is a basic marinade, which can be suited to any cuisine just by changing the seasonings. Using food storage bags means no clean-up!

Instructions

Things You'll Need:

  • olive oil
  • a citrus juice
  • minced garlic
  • salt & pepper
  • herbs/seasonings
  • gallon size ziploc bag
  1. Step 1

    Decide on the "flavor" - spicy Mexican, Italian, Greek, or ?
    This will determine the type of juice to use and the herbs to add.

  2. Step 2

    Combine basic ingredients in the large ziploc bag. For one pound of meat, chicken, or fish use 1/2 cup olive oil, 1 tbsp. minced garlic, and salt and pepper to taste.

  3. Step 3

    Personalize your marinade:
    Mexican cuisine: use 1/2 cup lime juice. Add seasonings such as ground cumin, fresh cilantro and/or parsley, ground red pepper, or fresh minced jalapenos.
    Italian style: use 1/2 cup lemon juice. Add oregano, parsley, and plenty of basil. Fresh is best, but dried is okay.
    Greek flavor: use 1/2 cup lemon juice. Add oregano and rosemary - a lot!!

  4. Step 4

    The basic recipe can be adjusted for any style of cooking. For a tropical flavor, use orange juice. Be creative! Just remember to use both the oil (for browning) and a citrus juice (to soften tougher meats and for flavor) in roughly equal amounts, and you can't go wrong.

  5. Step 5

    After combining the ingredients, add your meat, chicken, or fish. Meat and chicken may be marinated overnight for best flavor. Fish can be marinated for 1-3 hours. Grill (best method), broil, or roast your meat as desired, and enjoy!

Tips & Warnings
  • Always discard used marinade
  • Toss out the ziploc bag - you're all cleaned up!
