How to Make Flan Using Double Boiler Method

This procedure involves a double boiler method and is cook on the stove for approximately one and a half hours. It can be served in the same dish or transfered to other.

Instructions

Things You'll Need:

  • 4 medium size eggs
  • 1/2 cup sugar
  • pinch of salt
  • 1 tspn vanilla or grated lemon peel
  • 1 13oz can of evaporated milk
  • 1/2 cup milk
  • 3/4 cup of sugar for molds
  • large heavy saucepan
  • bowl or dish that fits in the saucepan without touching the bottom of the pan
  1. Step 1

    In a heavy saucepan melt sugar and transfer to bowl or dish. Using a double boiler method, place bowl or dish inside large heavy saucepan. Add enough water to pan but not to touch dish or bowl. Turn stove to medium high until water starts to boil. Reduce heat to medium.

  2. Step 2

    In a large bowl slightly beat eggs just until blended. Avoid over beating as it will create air bubbles.

  3. Step 3

    Add the regular milk and carnation milk, salt and sugar. Mix well and strain. Finally add vanilla or lemon peel.

  4. Step 4

    Carefully pour mixture into sugar coated dish. Cover and let cook on stove for 1 hour, uncover and cook for 30 minutes more of until flan seperates from sides of dish or sets. Making sure water in pan does not evaporate.

  5. Step 5

    Serve in same dish or carefully transfer to other dish.
