How to Make a Jack O'Lantern Breakfast Pie for Halloween

Put a brand new Halloween spin on breakfast with a jack o'lantern breakfast pie baked in miniature pumpkins. It's hot, spicy, delicious and absolutely perfect for Halloween morning.

Instructions

Things You'll Need:

  • 6 miniature pumpkins (not gourds)
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup half and half
  • 1/2 cup pure honey
  • 3 tbsp. dark molasses
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. allspice
  • Dash of salt
  • 1/2 tsp. pure vanilla extract
  • Whipped cream
  • Large baking sheet
  1. Step 1

    Preheat the oven to 400 degrees F.

  2. Step 2

    Slice the top off each miniature pumpkins, and scoop out the insides, scraping the sides clean. Discard of the pumpkin insides, or set them aside to use in another recipe.

  3. Step 3

    Crack the eggs into a large bowl, and whisk them until they're lightly blended and frothy.

  4. Step 4

    Add the milk, half and half, honey, dark molasses, ground cinnamon, ground nutmeg, allspice, salt and pure vanilla extract. Stir until the ingredients are smooth and well blended.

  5. Step 5

    Distribute the breakfast pie mixture evenly into the empty miniature pumpkins.

  6. Step 6

    Put the filled pumpkins on a large baking sheet and bake them for 35 to 40 minutes, until a toothpick or knife inserted into the middle comes out clean.

  7. Step 7

    Put the tops back on the miniature pumpkins, and allow the jack o'lantern pumpkins to cool for at least 20 minutes, and serve with whipped cream. If desired, garnish the tops with a bit of cinnamon and nutmeg.
