How to Tenderize Meats

Here is a quick way to tenderize meat, when you don't have a lot of time or energy to marinate for hours on end. Just follow these simple steps, and you will have tender, flavorful meat, in just a fraction of the time. Does this Spark an idea?

      Pound the meat lightly with a mallet or rolling pin, turning to ensure that you have access to all sides.

      Prick the meat quickly with a fork. Pricks should be no more than a half an inch a part, on front back and sides of meat.

      Sprinkle meat lightly with meat tenderizer, turning to ensure that all sides are accessed.

      Add meat to a marinade of red wine, or tomato juice. (Both wines and tomatoes contain a natural acid that helps to break down the meat fibers, naturally tenderizing.)

      Refrigerate meat in marinade for about 20 minutes.

      Remove meat from the refrigerator, and discard marinade. Cook as usual, for a tender, flavorful main dish which will taste as if you spent all day preparing it.
