Things You'll Need:
- 1 spaghetti squash per two people
- 1 jar of favorite marinara sauce
- 1 jar of green pesto sauce
- loaf of garlic bread (if desired)
- sun-dried tomatoes
-
Step 1
Scrape and clean insides thoroughlySlice the squash in half. The outer skin is a little tough, so be careful. Scrape and clean out all the seeds and stringy material as you would with a cantaloupe.
-
Step 2
Spaghetti squash after cookingPlace in microwave on high for approximately 13 to 15 minutes. When finished, take fork and scrape out squash...it comes out like spaghetti. Place this in a bowl and keep warm.
-
Step 3
Such a delicious alternative to regular pasta...and healthier!Top your spaghetti with favorite marinara sauce (heated, of course) then add a tablespoon of green pesto sauce on top of that. Add a few sun-dried tomatoes then sprinkle with grated parmesan cheese (not the stuff in the green cans, buy it already grated in a ziplock bag).

on 10/4/2009 I love spaghetti squash, but have always baked it. Microwaving would be much better, it would save lots of energy. 5 stars - thanks!
