Now that summer is here, try this delicious and healthy recipe! Spaghetti squash is so healthy and enriched with vitamins and nutrients...without the calories of regular pasta spaghetti

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 spaghetti squash per two people
  • 1 jar of favorite marinara sauce
  • 1 jar of green pesto sauce
  • loaf of garlic bread (if desired)
  • sun-dried tomatoes
  1. Step 1
    Scrape and clean insides thoroughly

Slice the squash in half. The outer skin is a little tough, so be careful. Scrape and clean out all the seeds and stringy material as you would with a cantaloupe.

Top your spaghetti with favorite marinara sauce (heated, of course) then add a tablespoon of green pesto sauce on top of that. Add a few sun-dried tomatoes then sprinkle with grated parmesan cheese (not the stuff in the green cans, buy it already grated in a ziplock bag).

Tips & Warnings
  • Heat up a loaf of garlic bread if desired
  • If you have a special spaghetti sauce recipe, use that instead
  • The green pesto and sun-dried tomatoes really make this a flavorful dish

on 10/4/2009 I love spaghetti squash, but have always baked it. Microwaving would be much better, it would save lots of energy. 5 stars - thanks!
