Apply any necessary steps to update or fix anything the inspector suggests. The inspector will be the one that can shut down a kitchen or give it the OK to operate. The inspector will check the kitchen walls, equipment, ventilation and overall set up for sanitary conditions.

Apply for the certification course for a commercial kitchen. The class schedule will be for one day in most communities, but may take more days to complete in some communities. The class will teach you about operating a kitchen. It also teaches you about the proper temperatures for foods, sanitary measures and how to prepare the food correctly. Most of the course is common sense.
