Things You'll Need:
- 2 Large ripe tomatoes, seeded and chopped
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 Tbsp. lime juice
- 8 slices bacon or healthier still-- turkey bacon
- 1/4 cup light mayonnaise
- 4 10 inch flour tortillas
- 2 cups fresh spinach
- salt to taste

Step 1
Make the Tomato Salsa. In a medium bowl combine tomatoes, onions, and cilantro. Stir in lime juice and salt. Set aside.

Cook bacon according to package directions. Drain well on paper towels. Cut bacon into large pieces.

Spread mayonnaise on tortillas. Top with spinach. Spoon salsa on spinach. Top with bacon. Roll up tortilla and cut tortilla sandwich in half.
