Easy to make and full of nutritional content, salmon cakes are a great meal idea. Adding just a few ingredients, salmon cakes can be delicious for lunch, or part of a dinner entree. Does this Spark an idea?

  • 1 can of Salmon, drained (14.75 ounces)
  • 2 cups bread crumbs
  • 2 eggs, beaten
  • 1/4 green onions, chopped
  • 2 tsp fresh dill weed
  • 1/4 tsp black pepper
  • 1 tsp lemon juice
  • 2 tbsp butter

      Begin by placing 1 1/2 cups bread crumbs, eggs, dill weed, green onion, pepper and lemon juice and mix all ingredients thoroughly.

      Add the salmon into the bread crumb mix, being sure to crumble the salmon into small pieces. Mix salmon and bread crumb mix well, being sure that all ingredients are combined.

      Next, form the patties from the salmon mixture. Each patty should be about 1/2 inches thick, making 7-8 patties total. Once the patties are formed, coat them in the remaining bread crumbs.

      Warm the butter in a skillet, and fry the salmon patties for 4 minutes or until they are golden brown. Each side should be cooked for the same amount of time, but add butter if more cooking time is necessary.

      Serve with a salad, or other side dish for a complete meal
