This sauce is perfect on chicken or pork. It has just the right combination of spice and sweetness.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 1/2 c ketchup
  • 1/3 c mustard
  • 1/4 + 2 T brown sugar
  • salt and pepper to taste
  • 1/2 onion, minced
  • 1/4 bell pepper, minced
  • 1 clove garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • a dash of tabasco
  1. Step 1

Saute garlic, onion, and bell pepper with a little bit of oil until softened. Don't let them caramelize too much- just let them lose some of their crispness.

  2. Step 2

Combine ketchup, mustard, hot sauce, spices, and brown sugar.

  3. Step 3

Fold in peppers, garlic and onions. Taste, and add more salt or pepper if necessary.

  4. Step 4

Cover with plastic wrap and refrigerate. This sauce is tastiest if made a day in advance so the flavors can blend.

  5. Step 5

If you prefer your sauce a little sweeter, use a red bell pepper and increase brown sugar to 1/2 cup. For more spice, use spicy brown mustard instead of standard yellow, a red onion instead of a white one, and/or increase the red pepper flakes to 1 tsp.

Tips & Warnings
  • Sprinkling your meat with a little grill seasoning before grilling gives it an added layer of flavor.
  • Because of the high sugar content of this sauce, it burns easily. Brush it on at the very end of cooking, NOT the beginning!
