How to Make Delicious Guava and Cheese Abuelita "Little Grandmother" Tea Pastries
If you've been to a Latin or Caribbean bakery, chances are you have had a pastry that contains a guava filling inside. This very sweet, flavorful filling comes from guava, a very sweet, tropical fruit. The soft pink flesh in the center of the fruit is used to make the guava paste and jelly that fills many Latin pastries. In fact, award-winning cookbook author Doug DuCap drew inspiration from Cuban guava and cheese pastries for his Abuelitas pastry, an easy-to-make bite-sized pastry perfect for a party or small get together.

- 2 refrigerated pie dough rolls
- 8 oz cream cheese
- 1 tbsp. lime juice
- 2 tbsp. sugar
- 4 oz. guava paste (block form)
- Olive oil spray
- 2 mini muffin tins

Remove the refrigerated pie dough from the refrigerator to thaw for at least an hour before you are ready to cook.

Preheat the oven to 400 degrees Fahrenheit.

Combine 8 oz. of softened cream cheese with 1 tbsp. of lime juice and 2 tbsp. of sugar in a medium mixing bowl.

Make four slices into the block of guava pasta, then cut up each slice evenly so that you end up with 24 small pieces of guava.

Unroll the pie dough and cut out 2 1/2 inch circles using a cookie cutter.

Spray two mini muffin pans lightly with cooking spray and carefully press each dough circle into the muffin cups.

Spoon 1 tsp. of cream cheese into each pastry circle in the muffin cup and press a piece of guava into the center of the cheese.

Place the muffin tins in the oven and bake for 20 minutes, until the pastry becomes golden brown. Set aside to cool before serving.

Tips & Warnings
If guava paste is not available, substitute it for guava jelly, adding about a teaspoon to each pastry in the muffin tin.
Substitute lime juice for lemon juice for a more tart pastry.
