How to Make Slop

My grandmother had a tradition of making slop. It has long been a family favorite, and continues to be one of my own children's favorites. My grandmother named it "slop" because she would make this using whatever leftover vegetables were in the refrigerator.

Instructions

Things You'll Need:

  • 1 lb. ground beef
  • 1 qt. tomato juice
  • 1 T brown sugar or honey
  • 5 potatoes peeled and diced
  • leftover vegetables in your refrigerator, or vegetable you enjoy
  • salt and pepper to taste
  1. Step 1

    Brown the ground beef.

  2. Step 2

    Add the remaining ingredients accept the salt and pepper. For the "leftover" vegetables, I like to use corn and green beans, but any will work.

  3. Step 3

    Simmer over low to medium heat until the tomato juice is cooked down to a sauce and the potatoes are tender.

  4. Step 4

    Add salt and pepper to suit your taste.

Tips & Warnings
  • You can substitute any meat for the ground beef. I use bison more often than beef.
  • If you allow your children, or husband, to call this slop, they will often embarrass you by telling their friends they eat slop for dinner.

on 7/9/2008 Heather, my grandmother used to make this every Thursday night because she used to go shopping on Friday and it was "slop" night, it was always great! Thanks for gring back a classic!

on 7/9/2008 lacurcio - I actually use ground bison when I make it. You can substitute other meats.
