How to make authentic tortellini

This delicious chicken and prosciutto tortellini dish serves four.

Instructions

Things You'll Need:

  • 2 ounces prosciutto
  • 4 ounces boned chicken breast, skinned
  • Pinch of ground allspice
  • 1 egg, beaten
  • 1 pound basic pasta dough
  • 2 tablespoon grated parmesan cheese
  • 1 1/2 ounces cooked spinach, well drained
  • 1 tablespoon finely chopped onions
  • 1 1/4 cups light cream
  • 4 ounces sliced button mushrooms
  • 2 garlic cloves, crushed
  • 4 tablespoon grated parmesan cheese
  1. Step 1

    Boil a pan of water and boil the chicken for 10 minutes in it.

  2. Step 2

    Process the chicken, prosciutto, spinach, and onion until finely chopped. Stir in the parmesan cheese, allspice, and egg to taste.

  3. Step 3

    Roll out the pasta dough and cut into 2 inch circles.

  4. Step 4

    In each circle of dough, put 1-1/2 teaspoon filling. Fold the dough in half and circle the ends, and curl the rest of the dough backwards to make a tortellini shape.

  5. Step 5

    Boil a pan of salted water and cook the tortellini in batches for 5 minutes. Drain and serve.

  6. Step 6

    Sauce: Bring the cream and garlic to a boil in a pan and simmer for 4 minutes. Add mushrooms, season, and cheese. Simmer, and pour sauce over pasta and sprinkle with more cheese.
