Mayonnaise cakes are great because it takes so few ingredients to make one and you don't use eggs or oil. The following is my favorite recipe for a soft, moist cake.

Now this girlfriend beats the cake. It sounds like a wonderful substitue for cream cheese and ricotta cheese which I have made a pound cake with. Yeah. I'm going to try this one. Time to open word... copy... print :)
