How to Make Mayonnaise Cake

Mayonnaise cakes are great because it takes so few ingredients to make one and you don't use eggs or oil. The following is my favorite recipe for a soft, moist cake.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 cups of flour
  • 1 cup of sugar
  • 1 1/2 tsp. of baking soda
  • 5 Tbsp. cocoa
  • 1 cup of cold water
  • 1 cup of mayonnaise (not lowfat and not salad dressing)
  • 1/4 cup of sugar
Step1
Combine all the ingredients, except the 1/4 cup of sugar, and mix until well blended. Place in a 9 inch square pan. (spray and flour the pan)
Step2
Sprinkle the top of the batter with the 1/4 cup of sugar. Bake at 350 degrees for approx. 35 minutes. Test with a toothpick.
Step3
Let cool and cut. For a real treat, combine with coffee ice cream.

on 7/8/2008 Now this girlfriend beats the cake. It sounds like a wonderful substitue for cream cheese and ricotta cheese which I have made a pound cake with. Yeah. I'm going to try this one. Time to open word... copy... print :)
