Things You'll Need:
- 1/3 cup white wine vinegar
- 2 teaspoons dijon mustard
- 1 tablespoon chopped thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 finely chopped cloves garlic
- 1 1/2 tablespoon chopped oregano
- 2 red and 2 green sweet peppers, seeded, cored, and sliced.
- 3 tomatoes, cored and sliced in fourths
- 1/2 pound mozzarella cut into thin slices
- 1 pound of cooked linguine
- 1 half pound summer squash sliced
- 2 medium sized zucchinis sliced
- 1 large red onion sliced into wedges
- 1/4 cup basil, dried, and cut into slices

Step 1
To prepare the dressing, whisk together vinegar, mustard, salt, and black pepper in a bowl. Add oil until the whisking thoroughly mixes the moil with the vinegar. Stir in thyme, garlic, and oregano. When you are done, leave half of the dressing for the vegetables.

Step 2
Brush canola oil on a medium heat gas or coal grill. Dip all the vegetables in the dressing and grill the vegetables until they are tender. Halfway through the grilling, brush the vegetables with dressing again. Once done grilling, keep the vegetables warm in an oven.

Step 3
In a large serving bowl, mix the linguine with the remaining dressing and add the basil and mozzarella cheese. Lastly, add the grilled vegetables.
