Things You'll Need:
- 4 hard-boiled eggs
- 2 tablespoons mayonnaise
- 2 teaspoons yellow mustard
- 4 slices of bread
- 2 tablespoons chopped green onion (optional)
- 1 tablespoon diced pimiento (optional)
- salt (optional)
- pepper (optional)
- lettuce (optional)

Step 1
You will first need to chop the hard-boiled eggs. Cut them into small chunks, including the yolk and all.

Step 2
Stir the chopped eggs, onion, pimiento, mayonnaise and mustard. Add salt and pepper to your liking.

Step 3
Now just spread the mixture on two bread slices, and add lettuce if you'd like. Top with the other bread slices and you're ready to eat!

on 11/1/2009 I love egg salad sandwiches and you make yours pretty much the same way I make mine. I guess if you put an avocado on anything it becomes "California style". Liked your article because it was short, to the point and so easy a cave man could do it. A little tip on dicing the eggs. I use a hand held potato masher and find that this gets the eggs to the exact consistency that I like for making the salad. Try it sometime and I think you will agree. Thanks again, 5*
