This is a yummy cold Hispanic dish that is a great soup appetizer. Here is a great way to make a fresh soup that is easy and takes advantage of delicious summer veggies.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Blender or Food Processor
  • Ingredients:
  • 1 garlic clove
  • Slice of onion
  • 1/4 cup vinegar (flavored or plain)
  • 1/3 cup oil
  • 1/2 cucumbers
  • 1/2 green peppers
  • 2-4 tomatoes
  • Salt
  • Hot pepper
  • 3 ice cubes
  1. Step 1

    Put diced garlic clove, chopped onion slice, 1/4 cup vinegar, 1/3 cup oil and 3 ice cubes in blender or food processor and mix until liquefied.

  2. Step 2

    Add chopped and seeded green pepper and cucumber and blend until mixed thoroughly.

  3. Step 3

    Slice tomatoes and add to blended mixture and continue to blend until they are lightly mashed, but not completely blended.

  4. Step 4

    Mix in salt and hot pepper to taste.

  5. Step 5

    Serve in soup bowls with seasoned croutons, chives, sliced tomatoes, sliced cucumbers or other favorite topping.

  6. Step 6

    Enjoy!
