How to make the best chocolate mousse

Chocolate mousse for people that love decent chocolate and would prefer something small but perfectly formed.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 100g Dark Chocolate (70% cocoa content)
  • 60ml Whipping cream
  • 2 Large eggs
  • 1 Teaspoon of caster sugar
  • Instant coffee
  • Electric whisk
  • 4 small tumblers
  1. Step 1

    Break up the chocolate and melt in a bain marie.
    Separate the eggs into separate bowls big enough to use the whisk (the egg yolks should go into a large bowl as this will contain the whole mixture.
    Pour the cream into a bowl big enough to whisk.

  2. Step 2

    Whilst the chocolate is melting, add 1 teaspoon of sugar to the egg yolks and whisk until light yellow.
    Once the chocolate has completely melted - pour into the egg yolks and gently mix together until completely combined.

  3. Step 3

    Whip the cream using the whisk until it forms stiff peaks.
    In small amounts (1 large tablespoonful)fold into the chocolate and egg yolk mixture until completely combined and smooth.

  4. Step 4

    Making sure you have cleaned the whisk thoroughly - whip the egg whites until they form stiff peaks.
    Like the cream - delicately fold into the mixture, using small amounts.
    Make sure all is completely combined.

  5. Step 5

    Carefully spoon into the tumblers, leaving a slight gap from the top, and spinkle a few granules of instant coffee on the top of the mousse.
    Keep in the fridge to set for at least 5 hours.
