Things You'll Need:
- 100g Dark Chocolate (70% cocoa content)
- 60ml Whipping cream
- 2 Large eggs
- 1 Teaspoon of caster sugar
- Instant coffee
- Electric whisk
- 4 small tumblers

Step 1
Break up the chocolate and melt in a bain marie.
Separate the eggs into separate bowls big enough to use the whisk (the egg yolks should go into a large bowl as this will contain the whole mixture.
Pour the cream into a bowl big enough to whisk. -
Step 2
Whilst the chocolate is melting, add 1 teaspoon of sugar to the egg yolks and whisk until light yellow.
Once the chocolate has completely melted - pour into the egg yolks and gently mix together until completely combined. -
Step 3
Whip the cream using the whisk until it forms stiff peaks.
In small amounts (1 large tablespoonful)fold into the chocolate and egg yolk mixture until completely combined and smooth. -
Step 4
Making sure you have cleaned the whisk thoroughly - whip the egg whites until they form stiff peaks.
Like the cream - delicately fold into the mixture, using small amounts.
Make sure all is completely combined. -
Step 5
Carefully spoon into the tumblers, leaving a slight gap from the top, and spinkle a few granules of instant coffee on the top of the mousse.
Keep in the fridge to set for at least 5 hours.
