This recipe for Chocolate Thumbprint Cookies will satisfy any chocolate peanut butter craving! The cookies are chocolate and have a fluffy peanut butter filling. YUM!

Instructions
  1. Step 1

    COOKIE INGREDIENTS:

    1/2 cup solid shortening
    1/2 cup sugar
    1 Tablespoon milk
    1/2 teaspoon vanilla
    1 large egg yolk
    1 square (1 ounce) unsweetened chocolate, melted and cooled
    1 cup all-purpose flour
    1/4 teaspoon salt
    1/3 cup mini chocolate chips

  2. Step 2

    Preheat oven to 350 degrees. For cookies: combine shortening, sugar, milk, vanilla and egg yolk. Add melted chocolate. Mix in flour and salt. Stir in chocolate chips.

  3. Step 3

    Form dough into 1-inch balls. Place on greased baking sheet and press thum in center of each cookie. Bake at 350 for 8 minutes. Repress centers after baking. Remove to wire racks to cool completely.

  4. Step 4

    FILLING INGREDIENTS:

    2 Tablespoons solid shorteming
    1/3 cup creamy peanut butter
    1 cup powdered sguar
    2 Tablespoons milk
    1/2 teaspoon vanilla

  5. Step 5

    In a mixing bowl, combine shortening and peanut butter. Add powdered sugar. Add milk and vanilla. Mix until smooth. Fill centers of cooled cookies with peanut butter filling.

Tips & Warnings
  • This recipe makes approximately 2 1/2 dozen chocolate peanut butter cookies. Enjoy!
