How to Make Easy Inexpensive Rice and Egg Meals
Many people from different countries around the world make thrifty, easy to prepare, and very delicious meals using rice and eggs along with a few other ingredients. Even with the price of rice and eggs going up, these are still very inexpensive meals to make for your family. Does this Spark an idea?

A super easy rice and egg dish is a traditional breakfast food from Japan. Just whisk a raw egg with a bit of soy sauce and then pour the mixture over hot steamed rice. Delicious alone or you can top with a bit of nori or furikake, or even chopped green onion. Some people like this kind of soupy but I prefer mine a bit drier. You can also add a bit of hot green tea over this dish. (This is much better than it sounds.)

Southern Style Rice and Eggs is a delicious down-home meal.
Prepare rice in your rice cooker, or in a pot.
Take 3 or 4 slices of bacon, fry, then drain. Set the bacon aside to eat with the dish. (If you prefer this dish vegetarian, then heat either butter or cooking oil instead of using the bacon grease.) Set some bacon grease or oil aside. Keeping enough in the pan to coat the hot rice with the oil or bacon grease, warm rice through.
Fry the eggs in a bit of the oil or bacon grease you put aside. Cook your eggs the way you like them, sunny side up or whatever you prefer.
To serve, place hot rice on plate, top each serving with a fried egg, seasoned to taste.
Add additional seasonings such as hot sauce or ketchup, as you wish.
Serve with the sliced bacon on the side.A somewhat similar dish is made in South America, except that the rice is formed into cakes and these rice cakes are then fried in the bacon grease until brown on each side. A relish of diced red and yellow bell peppers is served on the side of the rice, which you topped with the fried eggs. Cooked slices of bacon can also be served on the side if desired.

A variation of the above recipe is to take leftover rice, add a beaten egg, and form the rice and egg into patties, fry them in hot oil in a pan, brown patties on both sides, and serve them with tabasco sauce.

To hot cooked rice, add cooked and diced sausages, cooked onions, chopped, and then gently mix in a couple of hard-cooked eggs, cut in wedges. Serve this dish with ketchup, salsa, or hot sauce.
A heartier dish can be made with the addition of cooked, diced, potatoes, cooked mushrooms, diced and cooked red or yellow peppers, and cooked yellow or other summer squash, diced. -

Make a super simple meal by preparing hot fluffy rice, then frying a meat patty or a fish patty, and then fry one egg for each patty.
Serve with the hot rice on the bottom of the plate, topped with the meat or fish patty, and on the very top, the fried egg. Garnish with a bit of grated cheese and season to taste. -

Make a great rice and egg taco by putting hot cooked rice, scrambled or fried egg, and assorted chopped vegetables, into your hot tortilla, and then top it all off with salsa for an easy, delicious meal. (Or roll up the filled tortilla for burritos).

LOL! I've lived in the south all my life and never had or heard of rice and egg. Now those are a couple of dishes that got passed me!! (lol). The Japanese recipe sounds interesting but probably because I like to season and marinade with soy sauce. Great article1
