on 12/9/2009 I forgot to add this tip in my last comment..if you have any candy left in the pan, place it on a sprayed (greased)pan, spread i out if necessary, and then break it in pieces when cool with a whack of the sheet on the counter for some delicious hard tack candy!

on 12/9/2009 It's easily done that way..drop a bit into a glass of cold water ... you are looking for a real thin brittle string. Also before dipping the apples, put 1/8-1/4 t solid crisco into it and stir in to avoid bubbles on your apples. Another trick that makes them easier to dip, is to put the pan that you made the candy in over a pot of water that was boiled. It keeps the candy hot enough for dipping but yet off the stove so that it doesn't thicken anymore or burn!
These are tricks from a Mom who has been making candy apples for the last 25 years!
Enjoy!

on 10/26/2009 This is the best instructions I've seen for candied apples because it tells you how long to cook it and not just until it reaches 275.

on 11/22/2005 Add 1/3 cup of the cinnamon heart candies (available in bulk now instead of just in the decorating shakers) instead of the red food coloring and cinnamon oil!
