How to Make Mint Jelly

Spearmint makes a wonderful jelly to use with meats or spread thinly on fancy finger sandwiches with soft goat cheese. This recipe yields 7 6-oz. jelly glasses.

Instructions

Things You'll Need:

  • labels
  • Lids
  • Spoon Or Whisk
  • Canning jars
  • Damp cloths
  • Rings
  • Kettles
  • Sugars For Fruit Filling
  • Red Food Coloring
  • Pectin
  1. Step 1

    Examine jars for cracks and nicks. Discard damaged jars.

  2. Step 2

    Wash jars, leaving in warm dishwasher or hot water until needed.

  3. Step 3

    Wash mint leaves.

  4. Step 4

    Combine in large kettle apple juice, mint leaves, pectin and food coloring.

  5. Step 5

    Bring to rolling boil.

  6. Step 6

    Add sugar slowly to juice, stirring constantly.

  7. Step 7

    Boil for 1 minute or until jelly slides off spoon in sheets.

  8. Step 8

    Remove from heat and remove mint leaves.

  9. Step 9

    Skim foam.

  10. Step 10

    Pour into hot jelly jars, leaving 1/8-inch head space.

  11. Step 11

    Wipe tops of jars with clean damp cloth.

  12. Step 12

    Place vacuum seals and rings on jars.

  13. Step 13

    Invert jar for a few seconds.

  14. Step 14

    Label jars, cool, test seal and store.

Tips & Warnings
  • Green food coloring is optional.

on 7/20/2009 Why aren't there any amounts written here? How much apple juice - what kind of apple juice is best - how much pectin - how many mint leaves - shouldn't some chopped up mint leaves stay in the jelly - and why in the world would anyone color mint jelly red???
