Step 1
Select ripe or slightly overripe fruit.

Wash the fruit and remove peel, seeds and stems.

Purée the fruit.

Add lemon juice or ascorbic acid.

Add honey or sugar if you want.

Line a 13-inch by 15-inch jelly roll pan with plastic wrap.

Smooth out all wrinkles in the plastic wrap.

Pour fruit purée into pan.

Spread purée to about 1/8-inch thick.

Step 10
Dry in a 140 degree F oven or in a dehydrator.

Step 11
Test for dryness. If a touch in the center of the leather doesn't leave an indentation, it's done.

Peel the leather from the plastic while still warm, and roll it up.

Cool and rewrap in plastic.
