How to Make Cajun Spiced Baked Potatoes

Although these potatoes won't get crispy skins, the intrigue of Cajun spice makes up for it. This recipe makes about 3/4 c. of spice, enough for months and months of zippy potatoes.

Things You'll Need:

  • 1 tbsp. salt
  • 2 tbsp. cayenne pepper
  • 1 tbsp. thyme
  • 1 tbsp. oregano
  • 1 tbsp. peppers
  • 2 tbsp. garlic powders
  • 3 tbsp. paprika
  • 2 tbsp. onion powder
  • 1 tbsp. oregano
  • 2 tbsp. cayenne pepper
  • 2 tbsp. onion powder
  • 1 tbsp. peppers
  • 3 tbsp. paprika
  • 2 tbsp. garlic powders
  • 1 tbsp. salt
  • 1 tbsp. thyme
  1. Step 1

    Preheat oven to 400 degrees F.

  2. Step 2

    Make Cajun seasoning: mix together cayenne pepper, garlic powder, onion powder, oregano, paprika, salt, pepper, and thyme.

  3. Step 3

    Wash potato and prick it all over with a fork, to let spices seep inside.

  4. Step 4

    Sprinkle 1/4 to 1/2 tsp. of spice on a square of foil, then wrap the potato in it.

  5. Step 5

    Bake potato for 45 minutes to an hour, depending on its size.

  6. Step 6

    Top potato with butter and/or sour cream, and sprinkle on a pinch more spice.

Tips & Warnings
  • Store spice in airtight jar. Use to season meats, vegetables, eggs, or butter.
  • To make Cajun roasted potatoes, cut red, white, or gold potatoes - not russets or other bakers - into one-inch chunks, then toss with a little oil and spice. Roast for 30-45 minutes, or until tender and golden brown.

on 11/18/2008 I'm confused on the seasonings...is it 1 tbsp salt or 2? Is it 2 tbsp garlic powder ir 4? What's peppers? Do you mean black pepper?
