Choose your marinade and let the tuna steaks soak up the flavor overnight for best results. Tuna is versatile, and can be marinaded in teriyaki sauce, wasabi, soy sauce and honey, ginger, and garlic.

Rub the steaks with salt and pepper just before cooking, adding other spices to taste. If you have marinated your steaks in teriyaki or ginger, add a sprinkling of sesame seeds before the steaks hit the flame. Ground sunflower seeds make a flavorful addition to tuna steaks marinated in spicy wasabi.

Select your oil. When rubbing the steaks with salt, pepper, herbs or seeds, mix the ingredients with oil to help hold in flavor, promote even cooking and prevent burning. Just about anything goes with tuna, from butter to avocado oil, so choose your favorite or pick an oil which complements the flavor of your marinade. Tuna is a relatively dry fish, so you can use a generous amount of oil.

Pan fry tuna steaks for a crispy-on-the-outside, juicy-on-the-inside variation. Fry the steaks over low heat for about 4 minutes on each side, and then turn up the heat to brown and crisp the outsides.
