Things You'll Need:
- All-purpose flour
- Salt
- Baking powder
- Unsweetened chocolate
- Semi-sweet chocolate
- Unsalted butter
- Sugar
- Eggs
- Sour cream
- Vanilla extract
- Heavy cream

Step 1
Gather all required ingredients and preheat the oven to 350 degrees F. Grease a pan with butter and sprinkle in a light dusting of flour and shake out the excess. Mix the flour, salt and baking powder in a small bowl and set it aside.

Melt the unsweetened and semi-sweet chocolate and butter. One could either use the double boiler method or the microwave. Stir the mixture until it is smooth and completely blended together.

Place the sugar, vanilla and eggs in the bowl of a mixer. Be sure the mixer has a whisk attachment, but a hand mixer works just as well. Whip the sugar, vanilla and egg mixture for about 5 minutes. Add the melted chocolate and butter mixture and mix on medium for about 15 seconds. Remove the bowl and use a rubber spatula to carefully fold the flour, salt and baking soda into the chocolate batter. Add the sour cream by carefully folding it into the mixture.

Pour the chocolate batter into the buttered and floured pan and bake in the oven for about 45 minutes. Let the brownie cake cool for about 15 to 20 minutes and then refrigerate for 1 hour.

Make the ganache by heating the butter, sugar and heavy cream in a saucepan and stirring frequently. When the sugar is dissolved and the concoction comes to a boil, add it to the bowl of chopped chocolate. Allow the chocolate to melt for about 5 minutes and then stir until the mixture is smooth. Allow the ganache to cool completely.

Put the cooled brownie cake on a clean work surface and cut it into 3 even layers using a long sharp knife. Pour about 1 cup of the ganache over the first later and spread it evenly all the way to the edges. Place in the refrigerator for about 15 minutes, then repeat with the second cake layer. When this has set, place the final layer on the cake and cover with the rest of the ganache.
