Things You'll Need:
- 4 cups flour
- 1/2 tsp. salt
- 1 tsp. sugar
- 2 mixing bowls
- 1.2 cup butter
- 1 egg yolk
- Whisk
- Ice water
- Round-bladed knife
- Flour
- Rolling pin
- Biscuit cutter

Step 1
Combine 4 cups of flour, 1/2 teaspoon of salt and 1 teaspoon of sugar in a medium mixing bowl. Mix in 1/2 cup of chilled butter using your hands.

Whisk the egg yolk in a separate mixing bowl. Add the yolk to the dry mixture and cut the ice water into the mixture with a round-bladed knife. Continue mixing and adding water until the biscuit dough holds together.

Spread some flour lightly onto a work surface and knead the pastry dough until it is smooth. However, be careful, as overworking the dough will make it too tough.

Step 4
Dust the pastry dough with flour and then roll the dough to a 1/4" thickness with a rolling pin. Roll from the center pushing outward.

Cut the biscuit shapes by pushing a biscuit cutter into the flattened dough or form the dough into biscuit shapes using your hands.
