How to Make Pastry for Biscuits

Make a pastry for biscuits that is perfect for sweet treats such as strawberry shortcake or pies and tarts. This recipe creates a pastry with a cookie-like texture and calls for no baking powder or baking soda, which most biscuit recipes require.

Instructions

Things You'll Need:

  • 4 cups flour
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 2 mixing bowls
  • 1.2 cup butter
  • 1 egg yolk
  • Whisk
  • Ice water
  • Round-bladed knife
  • Flour
  • Rolling pin
  • Biscuit cutter
  1. Step 1

    Combine 4 cups of flour, 1/2 teaspoon of salt and 1 teaspoon of sugar in a medium mixing bowl. Mix in 1/2 cup of chilled butter using your hands.

  2. Step 2

    Whisk the egg yolk in a separate mixing bowl. Add the yolk to the dry mixture and cut the ice water into the mixture with a round-bladed knife. Continue mixing and adding water until the biscuit dough holds together.

  3. Step 3

    Spread some flour lightly onto a work surface and knead the pastry dough until it is smooth. However, be careful, as overworking the dough will make it too tough.

  4. Step 4

    Dust the pastry dough with flour and then roll the dough to a 1/4" thickness with a rolling pin. Roll from the center pushing outward.

  5. Step 5

    Cut the biscuit shapes by pushing a biscuit cutter into the flattened dough or form the dough into biscuit shapes using your hands.

Tips & Warnings
  • Use cold milk instead of ice water for a heavier and creamier flavor.
  • This recipe also makes a delicious pastry for fruit flan recipes.
