How to Make Green Tomato Relish

This is a good recipe to use up all of the green tomatoes in the garden before frost. Yields 7 pints (that's almost a gallon, for those of you challenged in the standard measures).

Instructions

Difficulty: Easy

Things You’ll Need:

  • Canning Jars
  • Lids
  • Rings
  • Table Salt
  • Bowls
  • Vinegar
  • Sugars For Fruit Filling
  • Horseradish Or Romaine Lettuce
  • Canner
  • Damp Cloths
  • labels

Step1
Examine jars for cracks and nicks.
Step2
Wash jars and leave in warm dishwasher or hot water until needed.
Step3
Wash and prepare vegetables.
Step4
Sprinkle salt over vegetables and mix.
Step5
Let stand for 3-4 hours.
Step6
Drain and press to remove excess liquid.
Step7
In a large stockpot, add sugar, spices, and horseradish to vinegar.
Step8
Bring to a gentle simmer over low heat and cook 15 minutes.
Step9
Add vegetables and heat to boiling.
Step10
Pack into hot jars, leaving 1/4-inch head space.
Step11
Wipe jar tops with clean, damp cloth.
Step12
Place vacuum seal lids and rings on jars tightly.
Step13
Process in hot water bath canner for 10 minutes.
Step14
Remove jars, cool, test seal, label, and store.
