How to Make Green Tomato Relish

This is a good recipe to use up all of the green tomatoes in the garden before frost. Yields 7 pints (that's almost a gallon, for those of you challenged in the standard measures). Does this Spark an idea?

  • Canning jars

  • Rings
  • Table Salt
  • Bowls
  • Vinegar
  • Sugars For Fruit Filling
  • Horseradish Or Romaine Lettuce

Instructions

    • 1

      Examine jars for cracks and nicks.

      Wash jars and leave in warm dishwasher or hot water until needed.

    • 3

      Wash and prepare vegetables.

    • 4

      Sprinkle salt over vegetables and mix.

    • 5

      Let stand for 3-4 hours.

    • 6

      Drain and press to remove excess liquid.

    • 7

      In a large stockpot, add sugar, spices, and horseradish to vinegar.

      Bring to a gentle simmer over low heat and cook 15 minutes.

      Add vegetables and heat to boiling.

    • 10

      Pack into hot jars, leaving 1/4-inch head space.

      Wipe jar tops with clean, damp cloth.

      Place vacuum seal lids and rings on jars tightly.

      Process in hot water bath canner for 10 minutes.

      Remove jars, cool, test seal, label, and store.

    I have a recipe for hot pepper relish that includes green tomatoes. If you've tried different kinds of relishes, you can probably use your imagination to follow these instructions. Otherwise, I think you would probably need more direction than is found here.

    The vegetables are virtually any thing that you like. green beans (need to be blanched first) cauliflower peppers .. anything.
