Step 1
Look for button mushrooms that are light in color, since the mushrooms darken when they get older.

Make sure button mushrooms are clean and that the area where the cap meets the stem is closed.

Choose specialty mushrooms, such as oysters and porcini (cépes), that are open where the cap meets the stem. The gills under the cap should be light in color, not dark brown or black.

Make sure mushrooms are firm, meaty and dry, and not withered.

Smell all types to make sure they smell pleasant and earthy.

Avoid mushrooms with bruises or pits or mushrooms that feel slimy.

on 6/11/2008 One of problem with dried mushrooms is worm attack. Nobody want to eat the remains of worms or other unappetizing and unexpected things. Very important is to look at dried pieces carefuly - if there are small crumbs or wholes or kind of little cobweb or dry-rot, do not buy this stuff, it means mushrooms are not free of worms. The pest which attacks is mill moth.
So mushrooms are very good product and are worth to try but only in a good quality.
