Regular limes can be substituted for Key limes for a variation on this treat. This no-bake recipe uses a graham cracker crust, which is as tasty as it is easy. Makes one 9-inch pie.

Difficulty: Easy
Instructions

Things You'll Need:

  • Splash Of Lime Juice
  • Splash Of Cream
  1. Step 1

Preheat oven to 350 degrees F.

  2. Step 2

Mix together graham cracker crumbs and butter in a bowl.

  3. Step 3

Use fingers to press crumbs over bottom and sides of 9-inch pie pan. Try to distribute crumbs evenly.

  4. Step 4

    Bake for 8 minutes.

  5. Step 5

Remove from oven and allow to cool.

  6. Step 6

Combine egg yolks and sweetened condensed milk. Mix well.

  7. Step 7

Add lime rind and lime juice, a little at a time.

  8. Step 8

    Pour into graham cracker crust.

  9. Step 9

Refrigerate for about 4 hours or until filling has set.

  10. Step 10

Whip the cream, and spoon it on top of pie.

on 10/12/2008 This is a poor recipe. Here's the correct one (and I'm a 5th gen native FL gal)
1 purchased graham crust
1 can sweetened condensed milk
4 egg yolks
1/2 cup Key Lime Juice-not lime juice--HUGE DIFFERENCE!
Mix yolks and milk, add key lime juice with beaters running. Pour into crust and either chill until set OR bake at 350 for 15 minutes if you are worried about eating raw egg yolks, I'm not. I've been eating them my whole life and I'm still kicking! Refrigerate pie till serving time. That's it--easy as pie! LOL
