How to Choose Asparagus

The peak season for asparagus is April through May in the western states, and May through July in the rest of the United States.

Things You'll Need:

  • Asparagus
  1. Step 1

    Look for straight, green, rounded stalks.

  2. Step 2

    Select firm asparagus that does not have a strong odor.

  3. Step 3

    Make sure the tips are small, closed and either dark green or purple.

  4. Step 4

    Avoid asparagus with woody stalks. The stalk's girth, however, does not affect its tenderness quotient; thin asparagus is no more likely to be tender than thick asparagus.

  5. Step 5

    Choose asparagus spears of similar size so that they will cook uniformly.

Tips & Warnings
  • White asparagus is not as sweet as normal asparagus; it's also more fibrous.
  • Once you get home, make sure the asparagus is either refrigerated or kept in cold water. Asparagus is best used the day you buy it, but it will keep for three to four days.
