How to Make Shrimp in Green Sauce

Shrimp in a tangy, winy sauce is an easy dinner served on rice, with a salad on the side. Serves four.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Pots
  • Shrimp
  • Table Salt
  • Distilled Water
  • Pat Of Butter
  • Two Or Three Onions
  • Flour Or Breadcrumbs
  • Parsleys Sprigs (for Garnish)
  • Soy Sauces
  • Uncooked Rice

Step1
Shell and devein shrimp.
Step2
Cook the shrimp in boiling, salted water until pink - about 4 minutes.
Step3
Drain and set aside.
Step4
Melt butter in a heavy saucepan over medium heat.
Step5
Add finely minced onions and cook until soft, but not browned.
Step6
Whisk in flour and cook for 1 to 2 minutes, stirring.
Step7
Gradually whisk in chicken broth and vermouth.
Step8
Cook, stirring constantly, until sauce thickens.
Step9
Add minced parsley, cayenne pepper, sliced olives, bitters, soy sauce and shrimp.
Step10
Simmer until thoroughly heated.
Step11
Serve over hot rice.

Tips & Warnings

  • Use angostura or any other kind of bitters if you don't have Peychaud's, or leave it out.
