How to Make Cucumber Cream Cheese Finger Sandwiches

Serve these classic finger sandwiches at a tea party, pool party, or any time you want a light, elegant snack. Makes 20-30 finger sandwiches.

Instructions

Things You'll Need:

  • 1 small onions - grated
  • A few tablespoons mayonnaise
  • 2 medium cucumbers - peeled, seeded, and grated
  • parsleys sprigs (for garnish)
  • 12 oz. softened cream cheeses
  • 1 lb. wheat bread
  • cucumber slices (for garnish)
  • Cucumber Slices (for Garnish)
  • Parsleys Sprigs (for Garnish)
  • 1 lb. wheat bread
  • A few tablespoons mayonnaise
  • 1 small onions - grated
  • 12 oz. softened cream cheeses
  • 2 medium cucumbers - peeled, seeded, and grated
  1. Step 1

    Combine the cucumbers and cream cheese, then blend in the onion.

  2. Step 2

    Add in a tablespoon or two of mayonnaise and blend until the mixture is soft and spreadable. Add a little more mayonnaise to soften further.

  3. Step 3

    Cut the crusts off the bread, then either cut each piece into fourths or cut into diamonds.

  4. Step 4

    Spread mixture over half the bread pieces, then top with another piece of bread.

  5. Step 5

    Garnish with parsley or cucumber.

Tips & Warnings
  • You can also leave the sandwiches open-faced.
  • Try this method with tuna or chicken salad, too.

on 1/11/2008 This is a great snack! Even better with a red onion, two sprays of Bragg Liquid Aminos and NO mayo.

For lunch keep the crust on for extra vitamins!

on 8/8/2006 Take cocktail rye breads and spread a very light layer of mayonnaise on them(use real mayonnaise only), top each little bread with a very thin, whole slice of the onion and then the very thin slice of the cucumber. Sprinkle lightly with fresh dill weed. Cut your cucumbers and onions on one of those mandolins and you will get a very thin whole slice. These are awesome!!!

on 11/22/2005 I use whipped cream cheese instead of regular and add extra cucumbers - pickling cucumbers have the best taste. I omit the onions, and use about 3-4 T of mayonnaise. I made these for a party and everyone loved them!
