Weather you are strictly vegan or just want a non artery clogging dessert, this pudding is sure to satisfy.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1/3 Cup Sugar (try Organic)
  • 3 TBL Cornstarch or 6 TBL flour
  • 1/4 tsp Salt
  • 1/2 cup Cocoa powder
  • 2 1/2 cups Silk Soy Milk or rice milk or almond.
  1. Step 1

    Mix all dry ingredients with a whisk to make sure there are no cornstarch lumps.

  2. Step 2

    Slowly, 1/3 cup at a time mix in your soy, rice or almond milk.

  3. Step 3

    Turn the heat on your stove to medium high and cook, stirring constantly, until pudding becomes thick. Stir one minute more.

  4. Step 4

    Pour into dessert dishes or leave in pan, but cover with plastic wrap that is touching the pudding to avoid a pudding skin. Refrigerate till cool or eat warm.

Tips & Warnings
  • Some soy milks are sweeter than others. If your preferred brand is sweet try reducing the sugar to compensate.
  • Cook 3 minutes after pudding thickens in pan if you would like a thick pudding for molds.
