      Choose a delicious bread as the base for your sandwich. Try ciabiatta, crusty French bread, whole wheat, sourdough, a kaiser roll or a hamburger bun. Toast the bread lightly, and place it on a cookie sheet with the cut side up.

      Put two slices of cheese on the bread. Any kind of cheese makes a wonderful hot sandwich. Add old favorites like cheddar, swiss, American or mozzarella, or experiment with some flavorful provolone, Havarti or muenster. A combination of cheeses is a great way to go.

      Cover the cheese with your choice of meat. Try some hot roast beef fresh from the slow cooker, turkey, salami, ham, bacon or leftover meatloaf. Top the meat with another slice of cheese.

      Add your choice of extras, such as sliced red onions, tomatoes, red peppers, spinach, hummus, artichoke hearts, pickles, garlic, celery or sun dried tomatoes.

      Sprinkle on a bit of spice. Fresh basil, cilantro or parsley are delicious, as are dried spices, such as turmeric, chili powder or turmeric.

      Top the hot sandwich with your choice of dressing or condiments. Ketchup, honey mustard dressing, mayonnaise, pickle relish, pesto sauce or hummus are all good choices, or just drizzle a bit of extra virgin olive oil over the sandwich.

      Finish the sandwich with another piece of bread, and put it in a preheated 350-degree F oven for about five minutes.
