Things You'll Need:
- A Food Processor
- A Chefs Knife
- 3 medium Roma Tomatoes
- 3 Large Hass Avacados
- 2 Large Jalepeno Peppers
- 3 Cloves of Garlic
- 1 Bunch of Cilantro
- 1 Lime
- 1/3 Cup Diced White Onion
- Table Salt

Step 1
First and foremost, wash all of your vegetables before combining them. Recent issues with e-coli, salmonella, and other dangerous bugs have brought to light the importance of washing our vegetables.

Step 2
Cut your avocados in half. Start by removing the little button of a stem that might still be attached. Then place the blade of the chefs knife in the center of that spot and gently press the blade in until it stops on the pit. Now gently roll the avocado along the blade until you have cut all the way around it. Your knife should come back to the point where it started, if not close. Gently twist the two halfs until they separate. The pit will normally stay in one half.

Step 3
Remove the pit of the avocado. Place the half with the pit on the cutting surface. Firmly tap the blade of the knife at an angle across the pit. It should stick firmly if you do it hard enough. Now take the avocado in your hand and twist the knife. The pit should pot right out. If it doesn't, your avocado isn't ripe enough.

Step 4
Scoop the meat from the avocado out with a spoon and drop it over into the food processor. Slice the ends off of the tomatoes and then slice them into quarters. Drop all of those pieces into the processor as well. Add your chopped onion and your peeled garlic cloves. Throw in a dash of salt. Blend this on high for a few seconds, just long enough for everything to begin mixing together.

Step 5
Chop the stems off of the jalapeno then cut them into 3 or 4 large pieces. Place the pieces into the food processor too. Chop a good portion or your cilantro into small pieces and drop them into the processor also. Blend this again for a while. You may have to stop a couple of times to scrape the sides of the processor.

Step 6
Once this is blended together it should have a nice smooth appearance. Once there scoop it out into a bowl. Before you serve it, don't forget the lime. Cut the lime in half across the center of the fruit. Then just squeeze it over the dip. You can add it into the mixer if you choose. This is up to your preference.

on 12/8/2008 Avocados rock and guacamole is simply awesome on a number of foods. Some non-purists (not necessarily me) like to add sour cream or even mayonnaise to "stretch" the recipe and make the guacamole mixture a little smoother. Some even claim it helps to keep the guacamole from getting that funky dark green color, but I'm not so sure. The acid should take of that nicely enough.
