How to Make Sausage, Pepper, and Onion Subs

These are quick and easy to make and the kids love them! They can easily be made lowfat as well!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 pkg. hot or mild Italian sausage links
  • 1 large yellow onion, sliced
  • 1 of each: red, green and yellow or orange bell pepper, sliced into strips
  • 1 small can tomato sauce or use leftover spaghetti sauce (see my recipe)
  • dried oregano, basil, hot pepper flakes to taste
  • olive oil
  • salt & pepper
  • Italian steak rolls, split
  1. Step 1

    Add 2 tablespoons of olive oil to pan and heat on medium low heat.

  2. Step 2

    Brown sausage links in oil on all sides, about 3 minutes per side.

  3. Step 3

    Remove sausage from pan, set aside, and add a little more oil if needed.

  4. Step 4

    Add onions and bell peppers, and saute until soft, but not brown.

  5. Step 5

    Add tomato sauce and stir mixture. Bring to a bubble.

  6. Step 6

    Place sausage links back in pan and nestle them in the onion/pepper mixture.

  7. Step 7

    Add basil and/or pepper flakes as desired.

  8. Step 8

    Cover and simmer about 25 minutes or until sausage links are cooked through.

  9. Step 9

    If using oregano, add to-taste 15 minutes before sausages are done.

  10. Step 10

    Serve on sub rolls and enjoy!

Tips & Warnings
  • Italian turkey sausage also works really well.
