Things You'll Need:
- Oven or slow cooker
- Four pound beef chuck roast.
- Garlic cloves
- Salt and pepper
- One can beef broth
- Basil
- Oregano
- Red pepper flakes
- Green pepper
- Italian Rolls or Baggetts
-
Step 1
Cut slits in the roast. Slice one garlic clove. Insert sliced garlic cloves into slits. Add more if you like a lot of garlic. Salt and pepper the meat. Set aside.
-
Step 2
Peel five to eight cloves of garlic. Do not slice. Saute garlic lightly in a frying pan with one to two tablespoons olive oil. Do not burn the garlic. Cook for one to two minutes. Remove just the garlic from pan and set aside. Put the prepared roast in the same pan and brown meat on both sides.
-
Step 3
Turn slow cooker on high. Or you can cook it slowly in the oven in a pan at 275 like great grandma did. The slow cooker works better. Spray or wipe slow cooker with olive oil. Add 1/2 cup of beef broth into slow cooker. Place browned beef and whole garlic cloves into slow cooker. Cover and put slow cooker on low. If the broth increases to the point where it is over the meant, remove some of the broth. Otherwise you will end up with soup. The meat will take 6 to 8 hours to cook.
-
Step 4
Cut up green peppers into slices. Fry in olive oil. Refrigerate green peppers until the sandwiches are ready to be served. Put two green pepper slices into the slow cooker for flavor. One hour before the meat is finished, turn mean over and add about one tablespoon each of spices and red pepper flakes depending on your taste into the slow cooker. Also add remaining broth one hour before meat is done cooking. Meat is done when it pulls apart easily with two forks.
-
Step 5
Prepare sandwiches and enjoy. Add additional salt and petter to the broth to taste.
