Step1
Use Flour or substitute with Bisquick!
What you'll need:
1. gallon size storage bag
2. 1- 1 1/2 cups flour (or substitute with Bisquick)
3. 2 eggs
4. spices: salt, pepper, garlic powder, paprika, Mrs. Dash original blend
5. Olive oil
6. Butter/Margarine (I use smart balance)
7. Parmesan Cheese
8. Fish Fillets
9. Non-stick pan
Step2
First wash the fish fillets and dry them off.
Mix in the gallon size storage bag (or a large bowl would work) The flour about 1 to 1 1/2 cups (can substitute with Bisquick), 3-4 tablespoons of Parmesan Cheese, sprinkle with salt, pepper, garlic powder, paprika (or sweet paprika), and Mrs. Dash original blend. *the spices I just sprinkle in, approximately 1/2 to 1 teaspoon of each, you can use to your taste.
In small bowl crack 2 eggs and whisk to blend eggs.
In a Non-stick pan put in approx. 3 tablespoons of butter/margarine and an equal amount of olive oil. Heat oil till it is bubbling, then turn heat down to about medium. (you may need to add extra oil during cooking if oil starts running low).
Dip fillets in egg wash, then put in storage bag and shake till completely covered in flour/bisquick mixture, then place fillets into pan.
Turn fillets till crispy, light golden crust is formed on fillets.
Step3
The fillets usually fry in the pan for about 15 minutes. This is just an approximation. Sometimes it may be a little more time, sometimes less. Just wait till it has that crust formed on the fillet, light golden color with a little crispness to it. Also during cooking, if the oil starts running low add a little more olive oil (no need to add more butter).
I have used this recipe with Walleye fillets and Blue Hake Fish Fillets. A dish that compliments this recipe is grilled potatoes or even fries!!!
