This is an exceptionally good recipe for Amish Sugar Cookies. These treats turn out soft and cake-like. Plan ahead because the batter must be refrigerated overnight.

Instructions
  1. Step 1

    INGREDIENTS:

    1 cup vegetable oil
    1 1/2 cups granulated sugar
    2 large eggs
    1 teaspoon baking soda
    1 cup buttermilk
    3 1/2 cups flour
    1 teaspoon baking powder
    1 teaspoon salt
    1 teaspoon vanilla

  2. Step 2

    In a mixing bowl cream the oil, sugar and eggs on medium seed for 15 minutes (the 15 minutes is the secret!) During the 15 minutes of mixing, put the baking soda in the butter milk and mix well. Set aside. In another bowl, sift together the flour, baking powder and salt.

  3. Step 3

    Turn the mixer down to low and alternately add buttermilk mixture, flour mixture and vanilla. Cover and refrigerate overnight.

  4. Step 4

    Drop batter by heaping Tablespoons onto greased cookie sheets. Bake at 400 degrees for 8 to 9 minutes. Remove to wire rack to cool completely.

  5. Step 5

    FROSTING INGREDIENTS:

    1/4 cup butter or margarine, melted
    2 cups powdered sugar
    1 teaspoon vanilla
    2 or 3 Tablespoons evaporated milk

  6. Step 6

    Place all frosting ingredients in mixing bowl. Whip together at high speed. Frost cooled cookies.

Tips & Warnings
  • Frosting may be tinted with food coloring, if desired.
  • Store in an air-tight container.
