This a great salad for summer or anytime.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 Boxes of Near East Rice-Pilaf Mix
  • 1 Cup Pecans
  • 1 Cup Dry Cranberries
  • 1 Cup Minced Scallions
  • 1/2 cup Finely Diced Celery
  • 1 Diced Red Pepper
  • 1/3 Cup Parsley
  • 1/4 Cup Fresh Chives (Dill or Tarragon)
  1. Step 1

    Cook rice with seasoning package. Cool the rice. Meanwhile mix all of the above ingredients together. Add to cooled rice.

  2. Step 2

    Dressing:
    4 Tablespoons Vinegar (Rice or White)
    4 Tablespoons Lemon Juice
    1 Garlic Clove Mashed or Minced (optional)
    Salt and Pepper
    1/3 to 1/2 Cup of Canola Oil
    2-3 tablespoons Sesame Oil ( optional)

    Mix all together and pour over rice mixture

  3. Step 3

    Cover and Chill. Serve alone or with side dish.

Tips & Warnings
  • Can be made ahead
  • Serve with pita bread
  • Can use another brand of pilaf mix
