Things You'll Need:
- 2 Boxes of Near East Rice-Pilaf Mix
- 1 Cup Pecans
- 1 Cup Dry Cranberries
- 1 Cup Minced Scallions
- 1/2 cup Finely Diced Celery
- 1 Diced Red Pepper
- 1/3 Cup Parsley
- 1/4 Cup Fresh Chives (Dill or Tarragon)

Step 1
Cook rice with seasoning package. Cool the rice. Meanwhile mix all of the above ingredients together. Add to cooled rice.

Step 2
Dressing:
4 Tablespoons Vinegar (Rice or White)
4 Tablespoons Lemon Juice
1 Garlic Clove Mashed or Minced (optional)
Salt and Pepper
1/3 to 1/2 Cup of Canola Oil
2-3 tablespoons Sesame Oil ( optional)
Mix all together and pour over rice mixture -
Step 3
Cover and Chill. Serve alone or with side dish.
