Moist and delicious! This is an easy recipe for iced pineapple cookies.

Instructions

Step1
COOKIE INGREDIENTS:

2 1/2 cups all-purpose flour
1 cup sugar
1/2 cup solid shortening
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup crushed pineapple, drained (juice reserved)
1 large egg
Step2
For cookies, combine flour, sugar, shortening, baking powder, baking soda, pineapple and egg. Mix well. Drop by teaspoon onto greased baking sheets. Bake at 350 degrees for 10 to 12 minutes. Remove to wire rack to cool completely.
Step3
FROSTING INGREDIENTS:

2 cups powdered sugar
4 Tablespoons pineapple juice
1 teaspoon vanilla
1/4 cup butter, softened
Step4
For frosting, combine powdered sugar, pineapple juice, vanilla and butter. Beat well. Frost cooled cookies.

on 10/11/2008 I don't think I've ever heard of using pineapple in baking other than pineapple upside down cake. Gonna have to reconsider it's uses and maybe give this a try!
