How to make potatoe and leek soup

This is a simple way to make potatoe and leek soup without weighing and measuring but still ending up with the perfect taste.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Potatoes
  • 3 leeks
  • chicken stock
  • onion
  • basil
  • black pepper
  • double cream
Step1
Firstly boil a pan of water adding two chicken stocks, as much basil as u would like i personally use about 7 leafs and add your chopped onion.
Step2
Peel your potatoes and cut into small cubes as to cook quicker and add to pan. Cut your leeks and also add to pan. Leave to simmer gently for 30mins.
Step3
Finally to make into a smooth soup add the ingredients but not the water yet to a blender. When you have done this add the water out of the pan so its level with the other ingredients in the blender. Blend and finally add double cream to your taste.

Tips & Warnings

  • The best tip would be to let the ingredients simmer together in a pan for at least 30 mins for the flavours to merge together.
