Pecan Tassies are a family favorite of ours. I like to make these and add them to my Christmas cookie tray. Enjoy!

Instructions

Difficulty: Easy

Things You’ll Need:

  • Ingredients as listed
  • Mini muffin tins
  • Oven
Step1
DOUGH:

6 ounces cream cheese, softened
2 sticks butter, softened
2 cups all-purpose flour.
Step2
In a mixing bowl combine cream cheese, butter and flour to make a soft dough. Grease mini muffing tins with solid shortening. Press dough on bottom and up sides of greased tins. Set aside.
Step3
FILLING INGREDIENTS:

2 large eggs, beaten
1 1/4 cup brown sugar
1 teaspoon vanilla
2 Tablespoons butter, melted
Step4
Mix filling ingredients well. Fill prepared shells about 1/2 way up. Do not over fill! Sprinkle with chopped pecans. Bake at 350 degrees for 13-15 minutes. Cool in pans 2 minutes before removing to wire rack to cool completely.

Tips & Warnings

  • Do not over fill the shells. The filling rises up when baked and will overflow if filled too much.
  • Store in an air tight container.
  • These cookies freeze well.
