Things You'll Need:
- 8 medium idaho potatoes
- 1 red onion
- 1 tomato
- 1 tspn oregano
- 1 tspn garlic powder
- 3 tbspns balsamic vinegar
- salt/pepper to taste.

Step 1
Boil potatoes with the skin on until they are soft. Check with fork for tenderness. Once they are soft, approximately 8 minutes after boiling remove from water and put in colander.

Step 2
Put potatoes under running cold water rubbing the skin gently it will come right off. Remove all skin.

Step 3
Cut the potatoes into quarters, put in a bowl. Slice up the red onion in half moons then add all ingredients and mix well.
Served chilled.
