How to Make Quiche by Chrissie

This is an original recipe of mine that is sensational at brunches. It is wonderful for a Mother's Day brunch, bridal shower brunch, (of course for more people, you would need to adjust the contents) or just for a relaxing Sunday at home with your family.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 8 eggs, beaten
  • 2 cups half-and-half cream or light cream
  • 8 ounces asparagus (from the can)
  • 1 stalk celery, chopped
  • 1 large green pepper, chopped
  • 2 cups fresh spinach, chopped
  • 1 cup soft bread crumbs
  • 1 cup shredded low-fat Swiss cheese
  • 1 cup shredded low-fat Cheddar cheese
  • 2/3 cup finely chopped red onion
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder (if desired)
  • Nonfat cooking spray
  • 1 large mixing bowl
  • 1 large spoon for mixing ingredients
  • 1 13-in. x 9-in. baking dish
Step1
In a large mixing bowl, combine all ingredients and mix well. Transfer to a greased 13-in. x 9-in. baking dish.
Step2
Bake, uncovered, at 350 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean.
Step3
Remove from oven. Let stand 12 minutes before cutting/serving. Easily serves six or more.

  • While this is a vegetarian dish, it is not a vegan meal. Please make certain to let your vegan guests know before serving.
