How to Grill Vegetables For the 4th of July

The traditional 4th of July barbecue usually means hotdogs and hamburgers, but grilled vegetables are delicious too, as well as economical and healthy.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • backyard grill
  • vegetables for grilling
  • seasonings

Step1
Prepare grill for cooking your vegetables, grill vegetables over medium coals for best results. Have picnic table all set with plates, glasses, silverware, and cloth napkins.
Step2
Cook 6 small onions, peeled, in small amount of boiling salted water until nearly tender, (this takes about 25 minutes usually). When done, drain the water and save the onions for grilling.
Step3
Take assorted vegetables, like yellow squash, zucchini squash, red, yellow, or green peppers, mushrooms, and whatever else sounds good to you. Wash vegetables, then quarter squash, cut peppers into large squares, keep mushrooms full size unless they are huge.

Skewer the vegetables on skewers, alternating different kinds of vegetables, including the cooked onions you set aside earlier, on the skewers.
Step4
In small saucepan melt about 1/4 to 1/2 cup of butter. Save.
Step5
Grill your vegetables over medium coals until done, about 20 to 25 minutes. Turn vegetables over and brush with the melted butter often. When done season to taste with salt and pepper. Serve hot and enjoy.

Tips & Warnings

  • This serves from four to six people, depending upon how many vegetables you grill.

on 7/1/2008 I love grilled vegetables! And one of my favorite vegetables to grill is eggplant. You can use chunks of the little chinese or japanese ones, or slice a big european one lengthwise, brush the cut side with italian dressing or just olive oil, and grill till it's soft and the cut side looks toasty. So, so delicious, if you like eggplant, and I LOVE eggplant! Thanks for a great reminder! 5 stars.
