I love making potatoes with many meals: from fried slices of potatoes, baked, mashed, home-made fries, etc.
My mom has shared with me how they have been grilling up potatoes, and they are delicious!!! These are excellent with any meal.
Step2
How to prepare:
1. Pick out as many potatoes as you would like. With a family of 5 I usually peel at least 6 potatoes. (you can peel them or not, if not; wash well)
2. After peeling/washing cube potatoes into small pieces and lay on a sheet of tin foil in the center. (Make sure the tin foil sheet has a couple inches on each side to fold over with top sheet.)
3. Dice up approx. 1/2 to 3/4 of an onion (or to your taste), and spread over potatoes.
4. Sprinkle, generously, with Mrs. Dash (original blend), salt & pepper.
5. Put butter/margarine (I use smart balance) over the top. I just take a spoon and place 1/2 spoonfuls all over ontop of the potatoes.
6. Put another sheet of tin foil over the potatoes and fold each side over, so it is sealed. This will help steam the potatoes as they grill!
Step3
Set your grill to a Medium Heat and put the tin foil potatoe-package on the grill for 30 minutes. It does take 30 minutes for them to get done, and if they go longer they can get over-done.
I always make sure to put in plenty of butter so that it keeps them moist with steam and helps them softened to perfection.
Also I love to use Mrs. Dash on these, it gives an excellent extra spicy to the potatoe.
